Long macerations of 20 to 25 days with careful temperature controls are employed, with the unloading taking place at the end of fermentation. Following this, the wine undergoes malolactic fermentation in barrels and ages for 18 months, with 1/3 of the barrels being new. This results in the Cuvée Réservée de l'Aïeul, a generous and authentic Cahors wine known for its very dark color and aromas of ripe black fruits, leather, licorice stick, chocolate, and roasted notes. The palate showcases a perfect blend of concentration and complexity, with tannins that have been impeccably polished through quality aging. This wine pairs beautifully with red meats, fragrant game, Quercy lamb, and foie gras terrine, thanks to its magnificent blend of malbec and tannat grapes.
