100% Cabernet Franc from the clay, limestone, and schist terroirs is meticulously treated in the winemaking process. The grapes undergo meticulous destemming before a maceration period lasting over three weeks, with gentle pumping over to extract color and tannins. Separation of the free-run juice from the press wines occurs before reassembly post-aging. Following malolactic fermentation, the wines are racked in tanks, then left to mature in vats until bottling, which includes tangential filtration for sweetness. Aging for a period of twelve to fifteen months enhances the wine's structure and complexity. This Anjou Villages showcases a robust and harmonious profile, ideal for cellaring between 5 to 7 years. It exhibits a deep color, intricate aromas, a luscious and sturdy palate, and velvety tannins derived from stringent plot selection.
