Vinification in temperature-controlled vats, direct pressing of whole bunches, inerted directly in the press to remove oxygen.
Settling at 10 °c overnight, to keep the best quality. Vinification at low temperature to keep the maximum flavor. Maturing on fine lees to get fat. Attention to optimum ripeness, lack oxidation, the entire harvest is inerted the receiving hopper to its entry into the vessel.
