Vines: Pinot Noir
Soil: The oolite limestone has a superficial similarity to the reddish igneous rock (porphyry) found in the Morvan district. It is pink in colour with pale green inclusions and overlain by banks of schist
Vinification: Handpicked, with selection for only healthy unbroken grapes. Crop is entirely destalked. Pinot is cold soaked for 3 days prior to vat maturation for a 19 day period. Cap is punched twice daily whilst the temperature of fermentation is between 25 and 30°C. 12 months in oak, of barrels of 2 year old barrels.
Tasting Notes: "Velvety feminine style is coupled with an aromatic intensity. With fruit that runs toward the black and plum side of the aromatic spectrum nuanced by hints of Asian spice and warm earth which broadens to a lacy, velvety finish. A large-framed Volnay, yet remains impeccably balanced and it's patience will outlast the select few to own one of the 1800 bottles produced."
