Vinification: Certified as “HVE” (Haute Valeur Environmental). A certification of winemakers whom; Protect biodiversity, protect plant health and Ensure biodiversity in the vineyards. Harvest entirely by hand for only the healthiest grapes. No synthetic treatments in these rocky vineyards. Native yeast. Syrah and Grenache are vinified separately, at 50° F in concrete. Aged in large foudre in Anne’s frigid cellar for 18 months.
Tasting Notes:"Peppery and floral up front, it reveals layers of supple raspberry, apricot and chocolate on the full-bodied palate, backed with rich tannings and a chewy finish. It should come into it’s prime drinking window within a couple of years and stay there for a decade and a half.
Ruby-red. Dried cherry, raspberry, exotic spices and hints of garrigue and smoked meat on the fragrant nose. Sappy and penetrating on the palate, offering gently sweet red fruit, spicecake and succulent herb flavors that deepen steadily on the back half. Fine-grained tannins make a late appearance on a long, smooth finish that leaves a suave floral note behind.
